Today we will prepare kidney beans (rajma) recipe.
Rajma is a very famous dish in north India, specially in Punjab & Delhi. Rajma is consumed in combination with rice. You can eat it with poori, chapati, paratha or roti. Rajma also well known with the name of kidney beans.
In Punjab and Delhi, no wedding or party is complete without Rajma on the menu. Rajma is very healthy and tasty recipe.

INGREDIENTS
For Pressure Cooking:
- 1 Bowl raw kidney beans
- 1 Big Cardamom
- 5-6 green cardamom
- 4-5 black peppercorn
- 1 bay leaves
- 2 cinnamon sticks
- Salt to taste
- 5 cups water
For Rajma Curry:
- 2 teaspoon ghee
- 1 teaspoon mustard
- 1 teaspoon cumin powder
- 3-4 cloves
- 3/4 cup pureed onion
- 2 teaspoons ginger-garlic paste
- 1 cups pureed tomatoes
- 1 Spoon Dry Mango Powder
- 1 teaspoon Kasmiri red chili powder or to taste
- 1/2 teaspoon turmeric Powder
- 1 teaspoon Coriander powder
- 1 teaspoon Fennel powder
- Salt to taste
- 1 spoon kasuri maithi
- 1 spoon sugar
- For garnishing => 1 tsp chopped Coriander
INSTRUCTIONS:
How to make Rajma Curry:
- Wash dry Kidney Beans under running cold water till water runs clear.
- Soak them in water for overnight. After soaking they will double up in size. drain the water.
- In a pressure cooker add the soaked and drained Kidney Beans, bay leaves, cardamom Big & Green, cinnamon stick, black pepper, cloves, salt and 4 to 5 cups water.
- Pressure cook at flame till you get 5-6 whistles.
- In a wok, heat 1 tablespoon of Ghee, ghee is for taste & Aroma.
- Add mustard, Cumin Seeds, Onion Paste, Fry the onions till the raw smell goes away and they are light golden brown in color.
- Add green Chili ginger-garlic paste and cook for 3-4 minutes.
- Now add the tomato puree, stir and let it cook for few minutes.
- Add bay leaf, Coriander Powder, Turmeric, Kashmiri Red Chili powder (for color), Fennel Powder, Salt to taste.
- Add Dry Mango Powder (Amchur Powder).
- Add 1/2 cup water and stir well so that it not get stick in bottom, add Kasuri Methi & sugar LId for few minute.
- Add the Kidney Beans next and stir will all the Kidney Beans are coated with the spices, around 2 minutes.
- Garnish with Coriander leaves.

NOTES AND TIPS:
- You can use canned Kidney Beans to reduce the pressure cooking time.
- I do not prefer to use canned products and processed food. But the choice is yours.
- Do not forget to Put raw spices while cooking rajma in cooker.
