INSTRUCTIONS:
For making Kacche Aam Ki Launji
- First wash the raw mangoes well. Then peel and cut it into pieces.
- If you want to reduce sourness, then you can boil it a little and take out the water, otherwise you can make it the usual way as shown.
- For my taste preference, I boiled it a little. Now we will turn off the gas and take out all the sour water.
- Now put a pan on the gas. Add a big spoon of oil in it. Then add asafoetida, mustard, cumin, fennel, fennel, green chili, ginger garlic paste and all the dry spices.
- After adding a little water, cook it well. Then add garam masala, dry ginger powder, and salt as per taste, and cook this mixture well.
- Now add the boiled raw mango pieces to the cooked spices and mix them well together.
- Then add water to it and mix it well. Now add jaggery or sugar whatever you want. We used jaggery in it.
- Cook the launji with a lid for 5-6 minutes, till the jaggery melts. Then put green coriander on top and turn off the gas.
