INGREDIENTS
For Dahi Bada
- Urad dal (skinned black lentils)
- Curd, 1 kg
- Oil for frying
- Asafoetida, 1 pinch
- Salt, 1/2 tsp
- Raisins, 8-10
- Roasted Cumin Powder, 1 tsp
- Red Chilli powder, 1 tsp
- Black Salt, 1 tsp
- Tamarind Sweet Chutney
- Green Chutney as desired
INSTRUCTIONS:
For making Dahi Bada
- Clean the skinned urad dal thoroughly and wash them with clean water two to three times and soak it for 3 to 4 hours.
- Now remove the water from the soaked lentils. Add a little water and grind it coarsely in the mixer jar.
- Take out the ground lentils in a big vessel and beat them well by hand.
- Now add a little salt and a pinch of asafoetida and raisins to the mixture.
- If you want, you can add cashew nuts and mix.
- Now, we will deep fry Dahi Bade. For this, heat oil in a pan for deep frying. When the oil is hot, fry Dahi Bade in it.
- Fry them on a medium flame, because on a high flame they will start burning from above and they will remain raw from inside. Fry them till they become golden.
- Take out the fried Dahi Bade from the oil, and put them in another pot containing hot water with a mix of asafoetida and salt. After 10 minutes, remove them from the water and squeeze the water with light hands.
- To serve Dahi Bade, beat the curd well and add sugar according to your taste. Now put the Dahi Bade in a serving plate and put curd on it.
- Add a little black salt, roasted cumin powder, red chili powder, and sweet tamarind chutney.
- Your Dahi Bade is ready to be served and ready to eat. They will come out very soft and tasty.

NOTES AND TIPS:
- When grinding the black lentils, add water only if needed.
- Make sure to beat the lentils paste well.
- You can keep the fried Dahi Bade in the refrigerator for 5-7 days.
